It(S1) is said(V1) [that(接続詞) choosing work(S2) (for companies)(M) <that(関係代名詞) environmentally friendly products and services(S2? か C2/O2?)>. となり、関係代名詞that以降の文が文法的に間違いがあり、また意味も不明となります。
それに加えて、形式主語構文 It(仮主語) is said <that(接続詞) …>(真主語)も、文法的に間違っており、また意味も意味不明となります。
以下のように導入文を修正し、それに続く支持文、結論の文を続けることが可能です。

Second, …. (二つ目に)＋自分の意見を支える内容の英文を、できれば２つ書く。

最後に、For these two reasons, I think/I don't think the number of those people who are consicous about their environment will increase in the future. これら２つの理由により、環境を意識する人達の数は将来増える/増えない と思います。
②1文丸写しになりますがsome peopleも入れたほうがいいですか？
→ It is said that some people choosing work … and services. とするのであれば、文法的にも意味的にも正しくありません。
なぜなら、choosing は動詞ではなく、動名詞か現在分詞となるため、✕some people(S)＋choosing となります。
また、It is said that some people choose to work …and services. としても、人々の数の増減の表現がないため、導入文としては✕です。
