下線部1行目でmuchが後ろにofがあるから名詞という
のならmoreも名詞な必要があるかと思ったのですがevenが形容詞としてmoreにかかることは有り得るのですか...？教えて頂きたいです。

moreは名詞で正しいです。

evenは形容詞だと画像の通りの意味になります。
これはこれで知っておいた方がいいですが
ここではevenは副詞で間違いありません。

形容詞は名詞を修飾するというのは間違いないのですが
副詞が修飾するのは、動詞・形容詞・副詞とかだけじゃなくて、実は何でも修飾するんです。（もちろん個々の単語によるのですが）
このevenみたいに名詞を修飾する副詞もあるのです。他に絶対見たことあると思うのはonlyです。
辞書で用例を見てみてください。

この副詞のevenは名詞を修飾している、
けれどもそれは形容詞のevenが名詞を修飾するのとは、違った用法だということです。
