最後の2行の英文の構造、特に波全部のところとchooseの語法がどうなっているか、 those thatの関係詞の部分がよく分かりません。。
thoseはthatの先行詞ですよね？教えてください🙇‍♀️

thoseはおっしゃる通りthatの先行詞です。
定番の訳し方としては「[that以降] のもの」と訳します。
また、learned by past experience のまとまりはthe worldを後ろから修飾しています。

【脳は、過去の経験によって学びとられた世界(像)に、一番ほど近く適合するものを、認識のために選んでいる】
という感じの訳になります。
(像)は、その前の部分の内容をふまえて付け足しました。
