that節内の主語は十中八九some people，動詞はcan't stopでしょう。
(playingも主語にはなり得ますが，意味が通りません。)

areに続く1語目はplayingかso excitingしかないわけですが，ここまで来ると全体の意味も見えてきて，｢面白すぎてやめられない｣の意味だと気づけるので，

ちなみに私は長文は一切読んでいません。
