という感じで、itを入れてしまうとthatが何を表しているのか分からなくなってしまうからです。
（itの部分を目的格のthatに変えている）

目的格のthatの後に主語　Be動詞　interested ときたらin空所にはinのみと覚えていれば良いですか？

関係代名詞の作り方(？)を覚えると良いです。
この問題では、interested inの後に来るはずのa topic(it)を関係代名詞thatに置き換えている(itの代わりになる)ので、inの後にitが来たらおかしいです。
