「使う」は右脳、左脳があるため、日常でよく使われる「頭を使う」から「右脳を使う」「左脳を使う」という表現になったのでは？
問題文の訳はあくまでも一例にしか過ぎないの、これしかない！と考える必要は全くありません。
訳例：
almost no one is completely right-brained or left-brained
ほとんど誰もが完全に右脳タイプである、あるいは左脳タイプであるというわけではない
→　ほとんど誰もが右脳だけを使う、あるいは左脳だけを使うというわけではない
※right-brained(形容詞)：右脳の、右脳タイプの／left-brained：左脳の、左脳タイプの　not completely ～　完全に～するわけではない
