この説明はちょっと不親切な気がします

① I don't like the way in which you treated me.
この文は参考書のとおり2文に分けたときのbの文の、
名詞the way を 関係代名詞whichに変えて
副詞句 in the way を in whichとして、
副詞句ごと前に持ってきてます
前置詞+関係代名詞というやつです。
この形のとき、関係代名詞はthatにできません。

②I don't like [the way][how] you treated me.
①の文のin whichは副詞句だったので、
1語の関係副詞howに変えられます。

関係副詞はwhere・when・why・howがあります。
関係詞のまとまりが修飾する名詞（先行詞）が、
場所を表す→where
時を表す→when
理由 the reason→why
方法・様子 the way → how

※howだけの特殊なルール 【超重要】
the way と how は必ずどちらか省略されます。[ ]でくくっているのはそれを表しています

③I don't like the way that you treated me.
thatは関係副詞の代わりにできます。
thatは関係代名詞としても関係副詞としても使えます。
