31行のitは何を指していますか?itがthingを指しているのかとも思ったのですがそれだとundurstandの後に名詞の穴ができてしまっておかしいのではないかと思いました。教えて頂きたいです。

the human raceじゃないですかね。
人間というものを、人格を持つ"ひと"というよりは
生物的な"種"みたいな言い方をしてるわけですよね。
動物の一種としてのヒトというか

動物も飼い犬飼い猫みたいに飼い主の感情が投影されたりするとheとかsheとか言ったりしますが、
基本的にはitなので、そう考えればthe human raceもモノ扱いできるかなと

それであれば it doesn't "understand"っていう、人間が主語にしかならないような動詞(=認識の動詞)が使われてても問題ないですよね。
