幸運や幸せ、健康などを祈る場合は基本的に “wish” も “hope” も両方使うことができます。
“wish” を使う場合は「wish＋人＋名詞」
“hope” を使う場合は「hope＋（that）文章」
本題の文、

を見ると、( ) + you (人) + every success (名詞) *注1
という構文なので hope ではなく wish が当てはまると判断できます。
*注1 : every (successを修飾する形容詞)+success (名詞)なので、厳密には
「wish＋人＋名詞句(形容詞+名詞)」となってます。
wish と hope の同じ意味の文の書き換え例。
I wish you luck. = I hope you will have good luck.
「幸運を祈ります」
I wish you much happiness.＝I hope that you will be very happy.
「多幸をお祈りします」
We wish you a Merry Christmas.＝I hope you will have a Merry Christmas.

I wish you well. = I hope that good things happen to you.
