summerは名詞(夏)の他に形容詞(夏の、夏季の)という使い方があります。この場合は形容詞ですね。summerの後ろにdaysがあり、それが省略されて問題文のようになっています。省略を戻すと、

「それはその夏の日々のなかで1番暑い日でした。(直訳)」

となります。この形ならばofでも違和感が無いかと︎︎👍🏻

なんで省略されてるんだ、と言いますと、文中でdayが既に書かれているからですね。英語は1度でてきた単語は繰り返し使いたがらないので、このような省略は時折ありますよ〜。
