【解説】 第1文の前半の文型は cultures (S) teach (Vt) us (01) moderation (O2) だが,
「文化が私たちに節度を教える」 「文化から私たちは節度を学ぶ」ということ。 in
everything 「すべてにおいて」 「すべてに関して」。 ポイントは everything we (S) do
(V) で, we の前に関係代名詞目的格 that が省略されていると考え, 「私たちがするす
べてのこと」 「私たちのすべての行動」と理解する。
後半は not を to conquer 「~を征服すること」の前に移動するとわかりやすい。

andの代わりよりは、同格として理解した方が良いように思いますね。
living simply だけでは、simplyの内容があいまいなので、カンマつけて言い換えてcloser to natureとしたんだと思います。

living simplyというときに、simplyっていろんな意味で取れますよね。
ミニマリストみたいに物を全く持たない もsimplyだろうし、自給自足の生活とかもsimplyといえるかもしれない。
ここで筆者がsimplyって言葉でいいたかったのはcloser to nature ってことですよ、
という風に私は読みとりました
