文章を読む限りappliedの主語は11行目のhumanや、文章にはない、peopleかと思われます。文章内では、humanとしか記述されていないので、humanをtheyと表現する、あるいはitで表現するにもどちらも不適なため、省略されているのではないでしょうか？

11行目のhumanなら後のhair lossまでの句と一緒に省略されてることになりますが、意味的にどうなのかな、と思うのと間が空きすぎていたりその間で別の話をしているのに、段落を変えて急に話を戻して更に省略までしていることになるので不自然な気がします。
文章にないpeopleというのも、省略をするのにその対象を明確に示さないのはおかしいと思います。
