「Not either」はダメです。eitherは「一方の」ですから、Not eitherとするならば「Neither」が自然ですね。
さらに、eitherでもneitherでも、これらは単数扱いですから、動詞はareじゃなくて isです。
あとは、最後の「for me」は、より主観的な好みを表すためにも「to me」の方がいいかなと思いました。

Neither of the two books is interesting to me.がいいかな。
